A lot of our food supply is modified to withstand pests and drought. I'm pretty sure that has led to the uptick in sensitivities and allergies. As a mother of 2 kids with food allergies, who otherwise has done all the right things to avoid them this is the only reason (other than crummy genes) I can come up with.
